This girl LOVES her tuna salad. I have fond memories of my mom making me tuna sandwiches with a generous side of goldfish while she turned on Days of Our Lives at 1pm. (Riley girls, if you're reading this, I know Sharon did the same.) It's something I continued regularly through college much to my roommate's dismay who absolutely hated the smell of tuna. (Love ya Meag.)
I never knew how junky mayo was until adulthood though. It was at one of my first cooking classes at Cambridge Culinary where we made our own mayo. All mayonnaise is simply egg whites, olive oil, lemon juice, (or another acid, such as white vinegar) with a pinch of salt. Homemade mayo is SO good and so good for you unlike the store bought stuff that contains canola oil and sugar, seriously, read the label of Hellman's next time you're at the grocery store and opt for a cleaner one. I digress, because this particular recipe isn't even using mayo, but it easily could. Today I used an avocado instead.
Also, if you follow my Instagram feed, you know how much I love "Everything but the Bagel" seasoning from Trader Joe's. Do yourself a favor and get it. Simply mash fork this all together and enjoy!
