This soup is so flavorful, hearty, and freezes really well. A nutrition packed soup is one of the best ways, I think, to have a wholesome meal with minimal effort once it's made. I LOVE this one. Chorizo sausage is traditionally a Portuguese speciality. In two weeks, I will be in Provincetown where I had the best Portugese Kale soup to date, at Nappy's. If you've been to PTown, you know what a gem this place is. Stained glass bar. Need I say more?
Chorizo Spice Blend (1 tsp chipotle powder, 1 tsp paprika, 1/2 tsp onion, 1/2 tsp garlic, 1/2 tsp salt, 1/4 tsp black pepper) 1 tbsp Apple Cider Vinegar 1 lb of Ground Pork 1 5oz box of Baby Kale 1 28oz of Fire Roasted Tomatoes 1 32oz box of Broth 1 chopped onion 2 cloves or 1 tbsp Minced Garlic 1 tbsp olive oil
1. In a large bowl, combine pork, apple cider vinegar, and Chorizo spice blend and incorporate together with hands. 2. Heat olive oil on medium high heat in a large sauce pan or Dutch oven. Sautée onion, garlic, and sausage until cooked. 3. Add tomatoes, broth, kale. 4. Let it simmer until kale cooks down, and enjoy!
